Pistachio Crusted Baked Salmon

Ingredients (makes 4 servings):

  • 1.5 lb whole salmon filet

  • 1 TBSP Lemon Juice

  • 2 tsp Olive Oil

  • 2 tsp Honey

  • 1 tsp Dijon Mustard

  • 1 Garlic Clove

  • 1/4 Cup Panko

  • 2 TBSP Parmesan Cheese Grated

  • Zest of 1 Lemon

Instructions:

Preheat the oven to 350. Place the salmon on a large parchment lined cookie sheet. Pat Salmon dry with paper towels. Season with salt and pepper; set aside.

In a small bowl, whisk together the lemon juice, olive oil, honey, mustard and garlic. In another small bowl, combine the panki, pistachios, cheese, and lemon zest.

Brush the lemon-honey mixture evenly over the salmon. Evenly sprinkle the pistachio mixture onto the salmon. Press so it sticks. Bake 10-14 mins. Garnish with lemon and parsley.

Turmeric Elixir

Ingredients (makes 4 servings):

  • 2 tsp Organic Turmeric powder or Fresh

  • 1-2 TBSP Fresh Ginger

  • 2 TBSP Freshly grated Lemon Rind

  • 1/2-1 Cup Fresh Squeezed Lemon Juice

  • 1 Cup Water or Coconut Water

  • 1 Cup Aloe Vera Juice

  • 1-2 TBSP Raw Organic Honey

Instructions:

Blend and enjoy warm or cold! Keep refrigerated.
