Pistachio Crusted Baked Salmon
Ingredients (makes 4 servings):
1.5 lb whole salmon filet
1 TBSP Lemon Juice
2 tsp Olive Oil
2 tsp Honey
1 tsp Dijon Mustard
1 Garlic Clove
1/4 Cup Panko
2 TBSP Parmesan Cheese Grated
Zest of 1 Lemon
Instructions:
Preheat the oven to 350. Place the salmon on a large parchment lined cookie sheet. Pat Salmon dry with paper towels. Season with salt and pepper; set aside.
In a small bowl, whisk together the lemon juice, olive oil, honey, mustard and garlic. In another small bowl, combine the panki, pistachios, cheese, and lemon zest.
Brush the lemon-honey mixture evenly over the salmon. Evenly sprinkle the pistachio mixture onto the salmon. Press so it sticks. Bake 10-14 mins. Garnish with lemon and parsley.
Turmeric Elixir
Ingredients (makes 4 servings):
2 tsp Organic Turmeric powder or Fresh
1-2 TBSP Fresh Ginger
2 TBSP Freshly grated Lemon Rind
1/2-1 Cup Fresh Squeezed Lemon Juice
1 Cup Water or Coconut Water
1 Cup Aloe Vera Juice
1-2 TBSP Raw Organic Honey
Instructions:
Blend and enjoy warm or cold! Keep refrigerated.
